Especially ensuring that no one &#8220;wastes not&#8221;: <strong>the American tradition of Thanksgiving leftovers is something that Italians can and do literally and figuratively eat up<\/strong>.<\/p>\n<h2>Thanksgiving Leftovers, Italian Style<\/h2>\n<p>Most Italian cuisine falls into the category of what has been traditionally\u00a0known as <em>cucina povera<\/em>, or the &#8220;poor cuisine.&#8221; <strong>Italians are masterminds of re-invention and re-use<\/strong>, and the peninsula&#8217;s bouts with periods of extreme poverty have resulted in the creation of dishes which ensure that no piece of animal or\u00a0plant is wasted. So<strong> stray from your monotonous cold mashed potatoes and delve into one of more of these seven Italian dishes<\/strong> that you\u00a0can create from your Thanksgiving leftovers.<\/p>\n<h2>Cranberry Sauce: Cranberry Risotto<\/h2>\n<p>This twist on the famous\u00a0<a title=\"Strawberry Risotto\" href=\"http:\/\/www.academiabarilla.com\/italian-recipes\/first-courses\/strawberry-risotto.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">northern Italian strawberry risotto<\/a> is a savory transformation of your turkey topper. For every 1 cup of arborio rice used, add up to 1\/4 cup of cranberry sauce halfway into cooking the rice.<\/p>\n<figure id=\"attachment_23811\" aria-describedby=\"caption-attachment-23811\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/selectitaly.com\/blog\/wp-content\/uploads\/2014\/11\/gnocchi-e1415989615886.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-23811\" src=\"https:\/\/selectitaly.com\/blog\/wp-content\/uploads\/2014\/11\/gnocchi-e1415989615886.jpg\" alt=\"thanksgiving leftovers\" width=\"600\" height=\"400\" \/><\/a><figcaption id=\"caption-attachment-23811\" class=\"wp-caption-text\">Turn those mashed potatoes into a dish that is arguably better&#8230;gnocchi<\/figcaption><\/figure>\n<h2>Mashed Potatoes: Gnocchi<\/h2>\n<p>While we have to give a nod to <a title=\"Bon Appetit Croquette\" href=\"http:\/\/www.bonappetit.com\/recipe\/mashed-potato-croquettes\" target=\"_blank\" rel=\"noopener noreferrer\">Bon Appetit&#8217;s leftover mashed potato croquette recipe<\/a>, we&#8217;ve got an even better way to use the day-after remnants of your sumptuous spuds. My 92-year-old Italian <em>nonna<\/em>, whose family is from Northern Italy, is the master of gnocchi made from leftover mashed potatoes. Her secret is adding less egg and more flour to account for the added moisture from the milk and butter. The gnocchi are quick to whip together, even faster to cook, and can be served with butter and <em>Parmigiano Reggiano\u00a0<\/em>or a simple <em>salsa al pomodoro<\/em>.<\/p>\n<h2>Turkey: Quick Rag\u00f9<\/h2>\n<p>While the true rag\u00f9 can&#8217;t be beat in flavor, it takes almost a full day to make; this simple solution will not only keep you eating the leaner bird instead of the traditional red meat, but can also be thrown together in minutes.\u00a0 I begin by sauteing about 2 tbsp of finely diced onions until translucent, then add turkey I&#8217;ve shredded with a fork and 1 tsp. tomato paste. I deglaze with a few splashes of red wine before adding pureed tomatoes, then let the sauce cook for the time my past cooks (about 8-10 minutes). When the past is ready, I toss it with the sauce in the pan. Any pasta with texture to hold the sauce will do <em>(rigatoni <\/em>or<em> gemelli<\/em> are two of my favorites).<\/p>\n<figure id=\"attachment_23810\" aria-describedby=\"caption-attachment-23810\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/selectitaly.com\/blog\/wp-content\/uploads\/2014\/11\/thanksgivingturkey-e1415989539140.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-23810\" src=\"https:\/\/selectitaly.com\/blog\/wp-content\/uploads\/2014\/11\/thanksgivingturkey-e1415989539140.jpg\" alt=\"thanksgiving leftovers\" width=\"600\" height=\"400\" \/><\/a><figcaption id=\"caption-attachment-23810\" class=\"wp-caption-text\">No part of the turkey should go un-re-used!<\/figcaption><\/figure>\n<h2><strong>Turkey Bones: Broth<\/strong><\/h2>\n<p>Don&#8217;t throw the scraps of the turkey away just yet! The carcass is perfect to make a batch of broth that can be frozen to be taken out for the\u00a0<a title=\"Move Over Santa\u2026Here\u2019s What You Need for a Real Italian Christmas!\" href=\"https:\/\/selectitaly.com\/blog\/all-you-can-italy\/move-over-santa-heres-what-you-need-for-a-real-italian-christmas\/\" target=\"_blank\" rel=\"noopener noreferrer\">Italian traditional Christmas dish <\/a>of <em>tortellini in brodo. <\/em>Freeze small amounts in ice cube trays for days that you need just a small amount of broth to complete a dish.<\/p>\n<h2><strong>Rolls:<\/strong>\u00a0<strong>Ribollita<\/strong><\/h2>\n<p>This\u00a0classic leftover Tuscan soup\u00a0is <em>made<\/em> for Thanksgiving leftovers. Throw the roasted veggies you didn&#8217;t finish with the <em>frittata<\/em> into (turkey) broth, add cannellini beans and additional desired vegetables, and serve by pouring over the toasted rolls. The stale bread soaks up the flavors of the soup to create a healthy, warm meal on a chilly late November night. We love the additional kale in this <a title=\"NYT Ribollita\" href=\"http:\/\/cooking.nytimes.com\/recipes\/1016052-ribollita\" target=\"_blank\" rel=\"noopener noreferrer\">New York Times&#8217; take on the soup<\/a> and suggest substituting turkey broth, rolls, and your pre-cooked veggies for the corresponding ingredients.<\/p>\n<h2><strong>Veggies: Frittata<\/strong><\/h2>\n<p>This one&#8217;s a no-brainer. Chop up those hoards of roasted veggies and make a fall <em>frittata<\/em>. Chop up extra meat and veggies and toss in couscous for a Palermo-inspired Thanksgiving leftover extravaganza.
