{"id":15963,"date":"2015-04-01T10:00:24","date_gmt":"2015-04-01T15:00:24","guid":{"rendered":"http:\/\/selectitaly.com\/blog\/?p=9963"},"modified":"2021-01-20T11:58:27","modified_gmt":"2021-01-20T11:58:27","slug":"passover-italian-style","status":"publish","type":"post","link":"https:\/\/selectitaly.com\/blog\/all-you-can-italy\/passover-italian-style\/","title":{"rendered":"Passover Italian Style"},"content":{"rendered":"<p>It is that time, when the moon is as round as a wheel of Parmigiano Reggiano after the first northern equinox, the time for the 14th Nisan, first night of Passover.<\/p>\n<p>The <i>Pesach<\/i>, <strong>Passover, is the Jewish celebration of the <i>Exodus,<\/i> the liberation of the Jews from Egyptian slavery<\/strong> after the implementation of the the Ten Plagues.<\/p>\n<p>The Jewish community has long been a significant part of Italian heritage, as has been their celebration of this important holiday.\u00a0Since the 2<sup>nd<\/sup> century BC, the Pesach tradition has been assimilated into the culture of Italian Jews and traditionally, Passover festivities, when in Italy, includes religious ritual, family get-togethers, and of course&#8230; food! Through the years, the Italian Jewish community, has developed its own unique style and habit in preparing Pesach dishes. <strong>Read on to discover which delicious delicacies the Jewish community in Italy enjoys during Passover.<\/strong><\/p>\n<h2>Italian Passover Seder<\/h2>\n<p>Even thought the basic ritual tradition of <strong>Passover Seder<\/strong> remains the same, such as drinking four cups of wine, eating <i>matza<\/i>, the unleavened bread, and reclining in commemoration of freedom, a little Italian influence could be recognized.\u00a0Here the six traditional items on the Seder with an Italian style:<\/p>\n<ul>\n<li><strong><i>Maror<\/i><\/strong>\u00a0and\u00a0<strong><i>chazeret<\/i>\u00a0<\/strong>\u2013 bitter herbs, symbol of the bitterness of the Egyptian slavery.<\/li>\n<li><i><strong>Haroset all\u2019italiana<\/strong>\u00a0<\/i>\u2013 a paste-like mixture of ground dates, oranges, raisins and figs, which substitutes the traditional Charoset, a brown compound that stands for the mortar used by the Jewish slaves to build pyramids.<\/li>\n<li><i><strong>Carciofi alla Giudia<\/strong>\u00a0<\/i>\u2013 Jewish style artichokes, deeply fried artichoke, specialty of the\u00a0Roman Ghetto, as a replacement of the\u00a0<i>Karpas.<\/i><\/li>\n<li><i><strong>Marzoh Lasagna<\/strong> (Mazzagne)<\/i>\u00a0\u2013 prepared with vegetables,\u00a0<i>matzot<\/i>, and lamb meat, which traditionally constitutes the\u00a0<i>Z\u2019roa.\u00a0<\/i>This is the only element of meat on the Seder Plate, symbolizing the\u00a0<i>korban Pesach<\/i>, Pesach Sacrifice, a lamb offered in the Jerusalem Temple, then roasted and eaten during the Seder night.<\/li>\n<li><strong><i>Stracciatella\u00a0<\/i><\/strong>\u2013 an egg-drop soup, stands for the conventional\u00a0<i>Beitzah\u00a0<\/i>a roasted hard-boiled egg, metaphor of\u00a0<i>korban chagigah<\/i>\u00a0(festival sacrifice) and of the mourning after the destruction of the Temple.<\/li>\n<li><strong><i>Insalata Sefardita<\/i><\/strong>\u00a0&#8211; a salad of romaine, dill and green onions with red wine vinaigrette<\/li>\n<\/ul>\n<p>Nevertheless, the traditional <em>Pesach<\/em> custom of cutting the middle of the three cakes of <i>matza<\/i> is observed in Italy with same vigor, joy, devotion and enthusiasm.<\/p>\n<p>The <i>Afikoman<\/i> is the larger piece of <i>matzo<\/i>, which is broken in two during beginning of the Passover Seder and set aside to be eaten as a dessert after the meal.
